Today was leftover chicken and rice

Ended up tasting really good despite giving me a stomach ache.

Cooked the chicken in cast iron with tons of margarine once the chicken was done I lowered the heat to at about half a bottle of barbecue sauce and a couple tablespoons of general tso sauce. Let that simmer.

Added water and rice and some cooked yellow bell peppers and a bit margarine. Seasoned with a seasoning mix my local grocery store. Added 2 slices of cheddar cheese and cooked till melted continued to simmer till near boil.

If I ever cook this again I'm going to add potatoes and a bit more garlic and slice open the peppers.

That was one of my go-tos when I could still cook.

Cooked the chicken in cast iron.
When I was learning to cook, I was living with my wife and mother-in-law. She had lots of cast iron and enamelware, and that’s my favorite now. I like to be sure there’s one teflon skillet for eggs or fish, but otherwise that’s what I keep.
